Mount Apo Civet coffee is made from the finest and ripest beans of coffee berries found in the Mt. Apo ranges. A civet eats the berries for their fleshy pulp. In its stomach, proteolytic enzymes seeps into the beans, making shorter peptides and more free amino acids. These beans are then washed, sterilized and dried in the sun before being roasted and made available for consumption.
After we gather and perform a thorough washing, cleaning, sun drying, roasting and brewing, these beans produce a strong, aromatic coffee that has very little bitterness. Mount Apo Civet Coffee gives you the ultimate and heavenly coffee experience.
Mount Apo Civet coffee is roasted at approximately 428°F for about 45 minutes. During this roasting process, the oil and sugar that are inside the beans is released, resulting in a 25% – 35% weight reduction from the original moist and heavy green coffee beans.
